Buen Provecho México: “Pan de Muertos”
Every year on 02 November celebrates Mexico's most important holiday – the Day of the Dead or “Dia de los Muertos”. Celebrated the return of the dead to their families, because after pre-Hispanic belief the dead to visit on this day in their survivors.For non-Mexicans, this is certainly one of the strangest holidays – to celebrate the dead in such a real cult is indeed rather uncommon elsewhere.

Ingredients
1kg flour
200g sugar
50g milk powder
Salt 20g
1 grated lemon rind
1 grated orange peel
5ml Oragenblütenessenz
5ml lemon flower essence
7 eggs
20g yeast
150g butter
150g margarine
Preparation
Mix the flour with the yeast and then press the mixture into a tray, get into the other ingredients. Mix everything well with your hands until you have a smooth mass.
The dough in a warm place and let stand for 30 minutes. Then put the dough in the refrigerator for 2 hours.
If the past two hours, take the dough from the refrigerator, put some of it aside to rest and form the loaves. From the dough before you form now separate “bone” and press the cross-like on the loaves. Then let it all again left for one hour in a warm place.
Finally, the loaves are baked at 200 ° C for 15 to 20 minutes.
After the “Pan de Muertos” comes from the oven, it is brushed with melted butter and sugar.
