As part of our series “Bienvenidos a México – our new life,” we want you to imagine today Rocio and Mat, almost exactly a year since the proud owner of a very successful organic and delicatessen here in Querétaro. “La Gallina Verde,” the name of the shop, is a romantic love story, a novel business concept for Mexico and of course for a nice little shop here in Plaza Dorada.

Rocio and Mat – how it all began

Got to know the current proud owner of “Verde Gallina” Rio de la Loza Rocio in 2004 – far away from Mexico – in Europe! To be more precise in England, the home of Mat What caused the Mexican Rocio seven years ago in London, is easy to explain: after being in Mexico City, her literature and communication studies ended, she moved there for the master to London. Time to get out and experience something new from Mexico was the motto. At the same time also studied Mat, a native of Cornwall, in London Designingeneur.

Both know each other during their Freiwiligenarbeit in the charity START. START is dedicated to refugees from all over the world who are trying in London to build a new life. Here, the organization cares about their kids, bring the foreigners in the English Language and cooked regularly in the so-called “cultural kitchen” with them.

In spring 2005, the two became a couple and then promptly follows the engagement on Valentine's Day 2006. Married was then – as it should be – twice: in July 2006 in England, as a practical example was Rocios Mexican family because of the FIFA Football World Cup in Germany anyway just Europe, and a year later, also with two families in Mexico, a regular fiesta mexicana up! Here, according to Rocio successive hit really two worlds: while their parents are architects, Mats family earns their money by farming. But there was therefore no problems.

Meanwhile, the two have been a three year old son, Santiago, and: another child is well on its way! Rocio is in fact pregnant again. The baby is a boy again, in February 2012 come into the world.

Professionally had something new. In search of a concept.

After the wedding both went back to London to pursue their careers. But soon they realized that this will not be their future. Rocio explains that, for both their professional qualifications in England, unfortunately, is no future, because in their industry, there are few jobs. Thus was forged and put together a future plan. The desire of the two was to make a “separate project” on its feet and become self-employed. A project that is intended for the well to the customer. A project that aims to promote the health of customers and increase their quality of life, for it has always been important to them to help other people – hence the voluntary service at START. And a project that will simultaneously protect the environment.

And so the idea of ​​”Gallina Verde,” which in German means about the “green chicken” was born. There should be an organic and delicatessen shop, which offers gourmet products from sustainable sources, which are produced in Mexico. 100% natural foods precisely.

With a business plan at hand, we went on to Mexico.

But why Mexico?

“Clearly, the quality of life in Europe is much better than in Mexico,” says Rocio. Starting with an ordinary health insurance through to public transportation. And yet it took the two to Mexico, back in Rocios home. For their business model they saw in Mexico simply a better future. And it was not about money, no, because in England the salaries are of course much better, but in England, the market was long over-saturated, while in Mexico the issue of “eco” was coming in straight.
